Day Twenty: 8/31/13

Day Twenty. What what?! 

Breakfast: 9am

Sweet potato fries 
Guac- I always get sick of guac after I have some good avocados. Avocados are just more work and hit or miss when they will be ripe.
I could get down most of the eggs, I just had to plug my nose and pretend it wasn't bad. No, it actually really wasn't too bad. 

Walked to the market to get some sweet fruit:
Without a doubt, strawberries are one fruit that I will spend more on to get then organic and locally grown. These strawberries are the best tasting ones we get. They are delicious. Ate four of them before the gym.

Also finally found my medjool dates!! A lot of recipes have them but I never know where to get them. It's funny because I didn't like dates the last time I tried them at the market. This time, they were a treat. I will definitely be eating them while using some to cook. So happy. 

You know what time it is... Pickles!! C is going to try to find a recipe without sugar being added for me!

So off to the gym for lifting day. Had a chocolate coconut chew larabar. It was okay, nothing special. I will stick to apple pie and banana bread now that I've tried most of the flavors I can have. I could also make lots of homemade ones since they all require dates. Whoop whoop.

Stopped at target to get C some more workout clothes. He needs enough shirts for 5 days a week at the new gym. Yikes. They were giving out free samples at Starbucks of salted caramel fraps. He's definitely a tutie!!


Once home, I ate a cookie while I prepared my lunch/dinner type thing.

Late lunch: 4:45pm
Egg (yeah not sure why I was craving this)
Chicken
Sweet potato fries 
Carrots and pepper
Strawberries 

Now we will be off to whole foods to get some dinner for tonight. Thinking of going with a fish like tilapia or salmon. Hope I don't chicken out. Ha!

Dinner: 8pm
Salmon with pineapple and jalapeƱo spread
Strawberries
Two cookies

Yum! The salmon was really good. It took wayyyy longer to cook than the lady said but our oven is always slow. It was worth the wait though. 

Bacon is now in the oven getting ready for tomorrow. Going on a hike tomorrow afternoon to the redwoods. It is so hot here so we chose one with shade. Going to be an easy 4 miler. Maybe run some after if we can. C is going to either have to go shirtless or wear a really loose tee. He is not enjoying this heat. To give you an example of how hot our apartment is, my coconut oil melted. C looked it up and the melting point of coconut oil and it's 78 degrees. Yikes. So our apartment at least has reached that. Ughhhh Indian summer.

Day Nineteen: 8/30/13

I pulled a muscle in my chest or lungs on that obstacle course. It hurts to breathe a certain way but I'm going to check out K Starr and see if he has any ideas. Just another happy reason to have our new box to teach us about safety and doing lifts properly. Anyways, I know I should have more than a smoothie for breakfast but I'm being super lazy so whatevs. I'm finally thinking I can stomach eggs again so I'll be having those this weekend. Maybe we will try a breakfast out this weekend since we can't really do dinner out anywhere. Let's hope C goes for it. 

Breakfast: 8:45am

This is my cute baby boy C. Such a big boy growing up. At 24 1/2, he finally is ready to move up to size medium shirts. Lots and lots of milk gain weight. Scary, but he assures me that it will help him lift better and he will start cutting fat when he gets up to 160. Oh presh boy!

I figured I'd be hungry early today since I didn't have an adequate breakfast. So I made lunch at 11:30am. 

Lunch:
Sweet potatoes, zucchini, salsa, pork and avocado mash
Pear 
Yes, this is C's leftovers from last night. Someone's eyes are bigger than their stomach (not sure how though)! I added some extra guac to make it nice and yummy.

Had a small bowl of applesauce with cinnamon around 4:30pm.

Finally!!!! I've been waiting forever for this! We finally were able to do a date night out. It's exhausting not being able to go out with your boo!! It's not a perfect paleo but it will do.

Dinner: 6pm
Sweet potato fries for me. Spicy curly for C.
I had a burger with bacon and avocado sans bun. C spoke up for me and got it served in a lettuce bowl. He's such a good hubby! 

We both have a bazillion fries left over so that's good. The burger was okay, definitely not anything special. Love my boo for taking me out to dindin!

Day Eighteen: 8/29/13

Breakfast: 8:45pm
Coconut fruit smoothie

Lunch: 12:15pm
Had a handful of raisins before lunch 
Chicken salad with cukes, carrots, celery,  apple and green peppers
The other half the apple was eaten as well

Had a handful of nuts around 3pm when I got home from my walk. I wasn't even hungry, just bored. Grrr. Need a job desperately. Someone just magically get me one. 

Had some apple chips and half a banana around 5ish. The banana was around 6:15. Hungry. Waiting for sweet potatoes to cook. They take so long. Paleo is starting to get the best of me.

Dinner: 6:45pm
Pork with avocado 
Zucchini 
Sweet potatoes
I am a huge fan of this meal.

Snack: 8pm
Cookie with a small scoop of buckeye ice cream
I didn't really enjoy the ice cream. All I kept thinking while I ate it was that I didn't really NEED it. Stupid head.

Day Seventeen: 8/28/13

My stomach was eating itself when I woke up. So hungry. Ate a kiwi as soon as I could stand.

Breakfast: 9am
Coconut fruit smoothie 
Bacon
Creatine 

Lunch: 12:15pm
One and a half sausage with peppers and onions
Raspberries (not pictured because I ate them all first)
Had my treat after- one cookie! Yum! 

Did I tell you that C's been getting donuts and coffee in the morning with his emergency cash? He was loaded up for a while in cash and now he's confessing where it all went. Stab right in my heart. He knows how much I love donuts.

Crap. I was just blowing a bubble with my gum (sugarless) on the park bench and it flew out of my mouth. I really wanted that. Of course I picked it up and threw it away. Not happy.

Swim weird geese looking thing, swim!!


This is the part of the day where I get my Vitamin D. 

Had a snack of three cinnamon apples (I wanted to try these), some cashews&sunflower seeds and some raisins around 4.
This was before I got lost in Chinatown trying to find C at one of his venues. Grrr. He is down for his nap now. Didn't think he'd get one in cause we have class early tonight but he snuck home early just to make sure he had one. Poor sleepy baby.

Dinner: 6pm
Chicken salad with cukes, celery, carrots and half an apple 
Balsamic vinegar and EVOO
Had a cookie for a treat after 

Went to our American Ninja Warrior obstacle course after dinner. Eh. That will be discussed in the AMRAP blog. 

Had a kiwi after on the ride home. Kind of went crazy when I got back. Had some more mixed nuts and another cookie. Also finished making my chocolate buckeye ice cream. 

Yum!!!! Had two spoonfuls to make it all fit in one container (and to make sure it was good).

Recipe:
One can full fat coconut milk
2 tbsp unsweetened cocoa
3 tbsp honey
Mix these three over medium heat until creamy. Put in freezer for two hours.

Add to ice cream maker. When almost done, add 1/4 cup almond butter.

Mmmmm simply delicious! And that wa my night.

Day Sixteen: 8/27/13

Trying anything to stay away from eggs for breakfast. Ugh.

Breakfast: 8:45am
Coconut fruit smoothie 
3 slices bacon 
Creatine 
Bacon and smoothie while I enjoy Boy Meets World

Lunch: 12:15pm
Chicken salad with cukes, carrots and celery 
Balsamic vinegar and EVOO
Raspberries 

Now my favorite part of the day- paleo chocolate chip cookies.
Ingredients: coconut flour, almond flour, eggs, bananas, vanilla, baking soda, coconut oil, and paleo chocolate chips 

Final product:

I had two of them around 2:30pm. Hard to hold myself back from eating all of them but I did. I'm going to stick them in the freezer and use them as rewards for myself. Yup.

One thing I really want to do is handstand walk. Well, okay I want to do a handstand first. But in the end I want to be able to handstand walk. Hopefully it is taught at the (thing we don't discuss-- new b...). Once again, ugh.

Snack: 4:30pm

Went climbing for a bit when C got out of work. Ate a pink lady apple on the way home.

Great meal!!

Holding myself off from a treat tonight. I don't NEED it, I just WANT it. If there's anything Trud taught me its that you can't always get what you want. BLOLz. Just checking to see if she still reads this.

Day Fifteen: 8/26/13

Half way! Half way!! Oh yeahhhhh half way! Day fifteen.

Breakfast: 8:45pm
Left over pancakes and sweet potato hash
Was too full to enjoy the raspberries. There were already raspberries in the berry compote.

Side note: I continue to lose weight. This is obvious but frustrating. I can't keep up with the calorie intake it takes to put on weight or at least stay where I'm at. When the 30 days ends, I'm definitely adding more carbs. Rice, potatoes, don't know what else but I need to get between 127-132. Goal. 

Lunch:
Chicken salad with cukes, carrots, celery and three slices pepperoni 
Raspberries
Balsamic vinegar and EVOO

So I've been reading on a lot of blogs about these Enjoy Life chocolate chips that are paleo. They are dairy, nut and soy free. I finally looked for them because I have a couple of recipes I want to try with them. I had a handful to taste them and yes, they were amazing. It has been 15 days since I've tasted anything remotely close to chocolate so it's safe to say these were amazing. The downside- they are SUPER expensive. They were $5.29 a bag while regular chocolate chips are around $2.89. I guess that's just the price I have to pay to stay paleo and ab-ful.

The charmin wipes go out to B &C. You're welcome.

Also bought these bad boys:
Omega 3 eggs. Really upping my omega 3s. Still taking my fish oil three times a day. No fish burps.

Snack: 3:30pm
Unsweetened applesauce with cinnamon and a side of raspberries. Yum!!

Dinner: 6pm
Rest of the sweet potato hash
Pineapple and mango 
1 1/2 slices bacon

Usual Monday night bacon prep.

After our WOD, I had a pink lady, 1 1/2 slices bacon, and some mixed nuts (almonds, cashews and sunflower seeds). 









Day Fourteen: 8/25/13

Day Fourteen. Going to try to keep this short and sweet because I forgot to post it yesterday. Reason- too emotional. Finally decided we are leaving our beloved rock climbing gym/CrossFit class to go to a new CrossFit gym. Ugh. Life. 

Breakfast: 9am
Finally. Good pancakes. Not only good pancakes, amazing pancakes. Pancakes that non paleo people would love. They would never be able to tell they weren't made with flour and sugar and all that crap.

I know it's hard to see over the abs in the last picture. Abs. Abs. Abs. Abs.
The pancakes were banana vanilla pancakes with a berry compote. Instead of sugar in the berries, you use a splash organic honey. All around, best breakfast yet.

Went to the gym and lifted. Got my first strict pull up. Then another. Two. That's a big deal. Doing one pull up has always been a goal of mine so doing two in a row was huge. I also did two sets of three HSPU. I've been trying to get lower and lower with them and I finally got them close to what I want. Woot woot. 

Had a banana bread Larabar after lifting and before climbing. Climbing-ahhh tears!! ,-______-,

Had a kiwi after climbing on the way home.

We didn't get to eat lunch until around 3:30. Mine consisted of:
Tuna with olive juice and olives
Green beans and sweet potatoes 
Pineapple
Cukes 

B's favorite part of the blog now... C's meal:
Cheesy burrito with a huge a$$ glass of milk.

Now for dinner around 7:
Sweet potato hash. I though I'd document the steps for you B:

1) Cook the garlic until it becomes fragrant

2) Add the onion and let it cook down

Ohhhhh whoops... Mom, Kenzie and Nico called on their way home so I had to leave the kitchen and gossip with them. Sorry bro, next time. Here's the final project though:
